Gluten Free Bread Crumbs – note to self

Need gluten free bread crumbs? This worked amazingly well for me:

Take enough slices of your favorite gf bread to make the amount of breadcrumbs you need for your recipe. Freeze the GF bread (or keep your gf bread in the freezer like we do).

Shred your frozen gf bread with a cheese grater. Choose the hole size that matches your needs and mood. Whatever you choose will be perfect.

There you go – GF breadcrumbs. Enjoy!

Christmas wishes

I don’t really celebrate Christmas – it’s still a relatively new holiday for me, but I have found over the last several years that it is increasingly a time for me to check in, take stock, and make (more) space for gratitude in my life.

Today, after a really heart filling morning with family, I like I’m overflowing with thanks and gratitude for the family and friends in my life. A hug from my older daughter, hearing my little one sing Florence and the Machine, or a little dancing by the tree with my wife to a tune we only hear in our heads – all these things and more have made me tear up today because I’m just so damn happy and in love with life and the people I have the honor to be with.

And, I want this joy and happiness for everyone. May all beings be happy, may all being be safe and healthy, and may all beings have a measure of ease in their lives.
